Ingredients
🦴 For the Bone Broth:
- 2 to 3 lbs mixed bones (chicken feet, beef knuckle, marrow bones)
- 1 large onion, halved
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 tbsp apple cider vinegar (helps extract collagen)
- 4 cloves garlic, smashed
- 2 inches knob of fresh ginger
- 10 cups filtered water
- 1 tsp sea salt
- 1 sheet kombu (seaweed, for added minerals) Optional
🍃 Cannabis-Coconut Oil (make ahead or purchase pre-made):
- ½ cup unrefined coconut oil
- 3.5 grams decarboxylated cannabis flower (high in CBD or balanced THC:CBD)
- Infuse using a double boiler for 2 hours at low heat (160–180°F), then strain and store.
🍜 For the Ramen:
- 4 blocks ramen noodles (fresh or dried)
- 4 tsp miso paste (white or red)
- 1 tbsp tamari or soy sauce
- 1 tbsp rice vinegar
- 1 tbsp cannabis-coconut oil (or more to taste and for potency)
- 1 cup shiitake mushrooms, sliced
- 2 soft-boiled eggs (optional)
- 2 green onions, thinly sliced
- toasted sesame seeds and chili oil (optional, to finish)
Instructions
Make the Bone Broth (8 hrs cook time):
- Add bones, vegetables, ginger, garlic, vinegar, and water to a large pot or slow cooker.
- Simmer on low heat for **8 hours** (or up to 24 for deeper extraction).
- Skim foam as needed. Remove from heat, strain, and discard solids.
- Add salt and kombu during the last 30 minutes (if using), then remove kombu before blending or serving.
Prepare Toppings:
- Sauté mushrooms in a bit of sesame oil until golden brown.
- Soft-boil eggs (6 minutes in boiling water, then chill and peel).
- Slice green onions and prepare any other toppings.
Assemble the Broth:
- In a saucepan, warm ~8 cups of strained bone broth.
- Whisk in miso paste, soy sauce, rice vinegar, and cannabis-infused coconut oil until fully dissolved.
- Adjust seasoning with more salt, soy sauce, or a splash of fish sauce.
Cook Noodles and Assemble Bowls:
- Cook ramen noodles according to package directions. Drain and divide into bowls.
- Ladle hot broth over noodles. Top with sautéed mushrooms, egg halves, green onions, sesame seeds, and optional chili oil.
