Instructions
Boil Water
In a small saucepan, bring the 2 cups of filtered water to a gentle boil.
Add Herbs
Once boiling, reduce heat to low. Add valerian root, lemon balm, lavender, and any optional add-ins (ginger/orange peel).
Simmer
Cover and let simmer gently for 15β20 minutes.
Steep
Turn off the heat and let the mixture steep for an additional 30 minutes with the lid on.
Strain and Sweeten
Strain the tonic into a jar. Stir in raw honey and apple cider vinegar if desired. Let cool to room temperature before sealing.
Store and Serve
Store in the fridge for up to 5 days. Warm gently before serving if preferred.
