Ingredients

  • 1 orange, peeled and segmented
  • 1 grapefruit, peeled and segmented
  • 2 cups cups baby spinach or mixed greens
  • 1 tbsp pumpkin seeds

Vinaigrette

  • 2 tbsp olive oil
  • 1 tsp cannabis-infused olive oil
  • 1 tbsp fresh orange juice

Instructions

Roast the Beets (if needed):

  • Peel and segment the orange and grapefruit, removing membranes where possible.

Make the Vinaigrette:

  • In a bowl or jar, whisk together olive oil, cannabis oil, orange juice, Dijon mustard, salt, and pepper until emulsified.

Assemble the Salad:

  • Arrange greens, beet slices, citrus segments, and pumpkin seeds on a plate or in a shallow bowl.
