Ingredients

For the Chia Pudding

  • 1 cup unsweetened plain or vanilla probiotic yogurt (dairy or coconut-based)
  • Β½ cup almond or oat milk
  • ΒΌ cup chia seeds
  • 1 tbsp honey or maple syrup
  • 1 medium ripe peach, diced
  • pinch of salt

For the Mint-Infused Cannabis Tea Reduction:

  • 1 cup water
  • 1 tbsp dried mint leaves
  • ΒΌ tsp decarboxylated cannabis flower or trim (or 1 tsp infused honey as a substitute), per potency preference
  • 1 to 2 tsp honey or stevia to sweeten (optional)

Instructions

Make the Mint-Cannabis Tea Reduction:

  • In a small saucepan, combine water, dried mint, and decarboxylated cannabis.
  • Bring to a simmer, then reduce heat and let steep for 8–10 minutes.
  • Strain through cheesecloth or fine mesh strainer into a heatproof bowl.
  • Simmer again until reduced by half (approx. 5 more minutes), then cool to room temp.
  • Stir in sweetener if using. Set aside.

Prepare the Chia Pudding Base:

  • In a mixing bowl, combine yogurt, almond milk, chia seeds, honey, and a pinch of salt.
  • Stir well to prevent clumping. Let sit 10 minutes, then stir again.
  • Fold in diced peaches.

Chill and Set:

  • Divide pudding into jars or ramekins.
  • Cover and refrigerate for at least 4 hours, or overnight for best texture.

Serve:

  • Before serving, drizzle mint-cannabis tea reduction over the top of each portion.
  • Garnish with a mint leaf or peach slice if desired.
