Equipment

  • 9x5 inch loaf pan
  • Whisk or hand mixer
  • Sifter (for flour)
  • Spatula or wooden spoon
  • Small Saucepan (if making Lavender syrup from scratch)
  • Measuring Spoons and cups

Ingredients

Banana Bread

  • 2 ripe bananas, mashed
  • 1 cup blackberries (fresh or frozen, gently mashed)
  • ½ cup coconut oil or butter, melted
  • ¼ cup brown sugar (or coconut sugar for a lower glycemic option)
  • 2 large eggs (or flax eggs for a vegan version)
  • 1 tsp vanilla extract
  • cups all-purpose flour (or whole wheat for more fiber)
  • 1 tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp ground cinnamon
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup unsweetened almond milk (or any plant-based milk)

Lavender Glaze

  • ½ cup powdered sugar
  • 2 tbsp lavender syrup
  • 1 tsp lavender extract
  • 1 tbsp almond milk

Instructions

Banana Bread

    Preheat Oven

    • Preheat your oven to 350°F (175°C). Grease or line a 9x5 inch loaf pan with parchment paper.

    Prepare Wet Ingredients

    • In a large bowl, mash the ripe bananas with a fork until smooth. Add the melted coconut oil (or butter), brown sugar, eggs, and vanilla extract, whisking until well combined.

    Mix Dry Ingredients

    • In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Gradually fold the dry mixture into the wet ingredients using a spatula or wooden spoon.

    Add Blackberries

    • Gently fold in the mashed blackberries, taking care not to break them down too much, as they will create beautiful purple streaks in the bread.

    Bake the Bread

    • Pour the batter into the prepared loaf pan, smoothing the top. Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean. If the top begins to brown too quickly, cover loosely with foil.

    Cool the Bread

    • Allow the banana bread to cool in the pan for 10 minutes before transferring it to a cooling rack to cool completely.

    Lavender Glaze

      Make Lavender Syrup (If Using)

      • If you don’t have lavender syrup or lavender honey, make it by combining equal parts water and sugar in a small saucepan. Add dried lavender flowers (about 1 tablespoon), bring to a simmer, and cook for 5 minutes. Strain and cool.

      Prepare the Glaze

      • In a small bowl, combine the powdered sugar, lavender syrup, lavender extract (if using), and almond milk. Whisk until smooth, adding more milk as needed to reach your desired consistency.

      Glaze the Bread

      • Drizzle the lavender glaze over the cooled banana bread, allowing it to soak in for a beautiful finish.

      Betsy's Infusion Notes:

🍌 Banana Substitution: You can substitute the bananas with 1 cup of unsweetened applesauce for a lower-calorie version. Vegan Version: To make this recipe vegan, use flax eggs (1 tablespoon flax meal + 3 tablespoons water, mixed and set aside for 5 minutes) instead of regular eggs and use plant-based milk.
🍞 Flour Alternatives: For a gluten-free option, use a 1:1 gluten-free flour blend. Keep in mind that this might slightly alter the texture.
🪻 Extra Lavender Flavor: If you prefer a more intense lavender flavor, increase the lavender syrup or add a few more drops of lavender extract to the glaze. Adjust to taste, as lavender can be quite potent.
🧺 Storage: Store the banana bread in an airtight container at room temperature for up to 4 days. For longer storage, wrap in plastic wrap and freeze for
      up to 3 months.
🍇 This Blackberry Banana Bread with Lavender Glaze is a perfect balance of sweet, floral, and comforting flavors that promote relaxation and emotional wellness. The lavender helps to calm the nervous system, while the bananas and blackberries contribute to mood regulation and stress relief. The decadent glaze provides a soothing finish, making this a truly therapeutic treat.
