This earthy, peppery salad supports cardiovascular and inflammatory health, pairing nitric oxide-rich beets with heart-healthy fats and plant-based omega-3s from hemp and walnuts. Pinene (from arugula and hemp) contributes anti-inflammatory and bronchodilatory effects, while caryophyllene (from cannabis and black pepper) offers stress and pain-relieving properties. The flavor is bold and grounding, with sweet roasted beets, creamy cheese, and a slightly spicy vinaigrette.
Preheat oven to 400°F (200°C). Wrap each beet in foil or place on a tray and roast for 40–45 minutes, until fork-tender. Let cool for 15–20 minutes, then peel and slice into rounds or wedges.
Toast the Walnuts:
While beets cool, toast walnuts in a dry skillet over medium heat for 3–5 minutes until fragrant. Set aside.
Make the Vinaigrette:
In a small jar, combine hemp seed oil, cannabis-infused olive oil, apple cider vinegar, Dijon mustard, black pepper, and sea salt. Seal the lid and shake well until emulsified.
Assemble the Salad:
In a large bowl or on a serving plate, layer arugula, roasted beets, sliced red onion, and toasted walnuts. Top with goat cheese if using.
Dress & Serve:
Drizzle salad with vinaigrette just before serving.
