Instructions
Prepare the Sweet Potatoes
Peel and cube the sweet potatoes into 1-inch chunks.
Place them in a large pot and cover with water. Bring to a boil over medium-high heat. Reduce the heat and simmer for about 15 minutes or until the sweet potatoes are fork-tender.
Mash the Sweet Potatoes
Drain the boiled sweet potatoes using a strainer or colander. Return the sweet potatoes to the pot or a mixing bowl.
Use a potato masher or hand blender to mash the sweet potatoes to your desired consistency.
Warm the Coconut Milk and Wild Lettuce Oil
In a small saucepan, combine the coconut milk (or milk of choice), olive oil, and wild lettuce oil. Heat over low-medium heat, stirring occasionally until warmed through. If using wild lettuce tincture, add it after warming the milk and oil.
Combine and Season
Pour the warmed milk and oil mixture into the mashed sweet potatoes. Stir to combine until the mash becomes creamy.
Add the ground cinnamon and ground ginger (optional), stirring until fully incorporated. Adjust sweetness by adding maple syrup or honey.
Season with salt and pepper to taste.
