In a small saucepan, gently heat the milk over low heat until warm (do not boil).
Add dried chamomile and lavender. Cover and steep over very low heat for 15–20 minutes.
Strain out herbs using a fine mesh strainer or cheesecloth. Set infused milk aside.
Cook the pasta
Boil pasta in salted water according to package instructions until al dente.
Drain and set aside, reserving a small splash of pasta water.
Make the cheese sauce
In a separate medium saucepan, melt CBN-infused butter over medium heat.
Whisk in the flour to form a roux. Stir constantly for 1–2 minutes.
Slowly add the infused milk, whisking continuously to prevent lumps.
Once the sauce thickens (about 3–5 minutes), reduce heat to low and stir in the shredded cheese and optional nutritional yeast. Add salt and pepper to taste.
Combine & serve
Fold cooked pasta into the sauce. Add a splash of pasta water for silkier texture if needed.
Serve warm. Optional: Top with extra lavender petals, cracked pepper, or a drizzle of infused oil.
Betsy's Infusion Notes:
⚠️ CBN is highly sedating. Best for nighttime use.⚠️ Do not consume before operating heavy machinery.⚠️ Drug Interactions: CBN and chamomile may potentiate sedatives and interact with anti-anxiety or antidepressant medications.🍃 If you don’t have CBN-infused butter, melt 2 tbsp butter and stir in 5–10 mg of CBN isolate per serving (adjust to tolerance).🌿 For vegan version: Use plant-based butter and cheese, and oat milk.❄️ For a deeper herbal infusion, make the milk infusion a day ahead and let steep in the fridge overnight (strain before use).
