Terpenes & Flavor Profiles: The matcha powder gives these bites a grassy, slightly bitter flavor with earthy undertones, rich in catechins that offer antioxidant properties. The CBD honey provides a subtle floral sweetness while also imparting anti-inflammatory effects. The coconut adds a creamy, slightly tropical flavor, while the peanut butter or almond butter offers a nutty, rich base. Together, they create a well-balanced, nutrient-dense snack or beauty treatment.
Bodily System Help: These energy bites and the skin mask provide benefits to both the dermal system and digestive system. The matcha and CBD honey offer powerful antioxidant properties that support skin health, while healthy fats from coconut, peanut butter, and coconut oil support skin hydration and reduce inflammation. When eaten, they provide an energy boost and help with focus and relaxation. The CBD honey has stress-reducing properties, making it ideal for soothing both the body and mind.
Number of Servings: This recipe makes about 12-15 energy bites, depending on the size.

Equipment

  • Mixing Bowls one for dry ingredients, one for wet ingredients
  • Spoon or Spatula
  • Baking Sheet
  • Parchment Paper Optional
  • Refrigerator

Ingredients

  • ½ cup Unsweetened coconut hydrates and nourishes skin
  • ½ cup Rolled oats provides fiber and texture
  • 2 tbsp Matcha powder rich in antioxidants and anti-aging properties
  • 1 tbsp Chia seeds packed with omega-3 fatty acids, supports skin health
  • 2 tbsp Peanut butter or almond butter for healthy fats and smooth teture
  • ¼ cup CBD honey promotes relaxation, skin healing, and reduces inflammation
  • 1 tbsp Coconut oil moisturizes skin and helps bind ingredients
  • ¼ tsp Vanilla extract adds flavor and aroma
  • Pinch of sea salt balances flavors

Instructions

Prepare Dry Ingredients

  • In a mixing bowl, combine the shredded coconut, rolled oats, matcha powder, chia seeds, and a pinch of sea salt. Stir well to combine all the dry ingredients evenly.

Combine Wet Ingredients

  • In a separate small bowl, mix together the peanut butter (or almond butter), coconut oil, CBD honey, and vanilla extract until smooth and well combined.

Combine Wet and Dry Ingredients

  • Pour the wet ingredients into the dry ingredients and mix everything together thoroughly. If the mixture is too sticky, add a bit more coconut or oats. If it's too dry, add a little more honey or coconut oil until you achieve a dough-like consistency.

Form Energy Bites

  • Scoop small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls using your hands. If the mixture is too sticky, lightly wet your hands with water to help shape the bites.

Chill to Set

  • Place the energy bites on a baking sheet lined with parchment paper and refrigerate for at least 1 hour or until they have set and firmed up.

Optional: Use as a Skin Mask

  • If you want to use the energy bites as part of a beauty routine, mash the bites into a smooth paste and apply it directly to your face as a hydrating skin mask. Leave on for 15-20 minutes and then rinse off with warm water. This will provide a nourishing, antioxidant-rich treatment for your skin.

Serve

  • Once chilled, enjoy the energy bites as a snack or as part of your beauty routine!

Betsy's Infusion Notes:

Texture Adjustments: If the mixture feels too sticky, add a little more coconut or oats. If it’s too dry, add extra CBD honey or coconut oil to help bind the ingredients together.
Storage: Store the energy bites in an airtight container in the refrigerator for up to 1-2 weeks. You can also freeze them for longer storage.
Skin Mask Option: The ingredients are safe for most skin types, but it’s always a good idea to do a patch test before using any homemade mask to check for potential allergies or sensitivities.
Customizing the Flavors: Feel free to experiment with other flavor additions, such as cacao powder, cinnamon, or dried berries. These can enhance the antioxidant properties and flavor of your energy bites.
These Matcha-Coconut Energy Bites with CBD Honey are a delicious and nutritious way to nourish your body from the inside out while also being a great addition to your skincare routine. Enjoy them as a snack or use them in a beauty mask to relax, refresh, and rejuvenate your skin!
